Aloo Baingan (Potato Eggplant Curry)


A very simple, traditional Indian style cuisine. The combination of Potato and Eggplant with spices makes it a soft juicy preparation that can be eaten with chapatti and other breads. Try it once and enjoy this simple spicy delicacy that you will never forget. So let’s start the recipe. Yum.

Ingredients:
Eggplant ( long cylindrical purple colored slit in sticks)-250 gm
Potato (cut lengthwise in sticks)-2 no’s
Garlic (finely chopped)-4 cloves
Ginger (finely chopped)-1 tsp
Tomato (finely chopped)-2 no’s
Green chilly (finely chopped)-4 no’s
Spices:
Turmeric powder-1 tsp
Coriander powder-1 tsp
Red chilly powder-1 tsp
Salt to taste
Garam masala-1 tsp

Cumin seeds -1 tsp

a pinch asefetida

Vegetable oil-4 tbsp
Chopped coriander leaves-a handful

Method:
Heat oil in a wok or pan , add cumin seeds , ginger and garlic cloves.Saute for 1 minute.

Add potato slits ,stir and let it cook for 10 minutes till potato are tender.

Now cornered the potatoes on one side.Add tomatoes and chillies In the center.

Add all spices and salt.Stir the with tomatoes.

Add eggplant slits over the tomatoes and cover them with potatoes.

Let it cook for 10 minutes without stirring (with closed lid).Stir and cook for 2 minutes.

Remove from heat,add chopped coriander.

Serve with chapati , rice or bread.
Serve-4. Cooking time-30 minutes

  6. This looks good! I recently made an eggplant curry in which I mashed up the eggplant, but like how you sliced the eggplant and included potatoes, too.
